How About Them Waffles?
Happy National Waffles Day! I know what you're thinking. Did you just make that holiday up? Come on, we know how much you love waffles! I can honestly say this is a real holiday and I couldn't be happier about it. I kind of wish I had thought of it myself. I mean, who actually assigns these national days? That would be quite the job.
In the words of Leslie Knope:
“We need to remember what’s important in life. Friends, waffles, and work. Or waffles, friends, work. It doesn’t matter. But work is third.”
In honor of Waffle Day, I'm going to share with you two of my favorite waffle recipes. Along with a few tips on making these waffles absolutely amazing including my secret ingredient.

If you are a pumpkin enthusiast, then this recipe is absolutely for you. I have learned to experience the seasons of life through taste and smell. For this reason, I pick candles resembling the season we are in. I also like to cook certain meals to represent the different seasons as well. Pumpkin represents the fall for me. But for some of you, pumpkin is a year round theme. Whichever category you find yourself in, I guarantee this recipe is a winner. It makes a lot of waffles, so you can literally have it all year if you so desire.

Some of you might be box mix kind of people. I totally get it. I have the tendency to keep the box for a quick dinner or weekend idea. But, I'm a savorer by nature. This means that I like to savor my coffee for long hours in the morning. I like to actually sit down and taste the food I'm cooking. I like having the slow morning or day to mix up all the ingredients and literally smell magic being made. If this is also you, then find this recipe below for your own delight.
Lexie's AMAZING Waffle Recipe: This is my adapted recipe, but you can always refer to the original recipe if you'd like.
Amazing Waffles
A quick recipe on the classic, buttery waffle.
- 2 cups All Purpose Flour
- 2 tbsp Sugar
- 4 tsp Baking Powder
- ½ tsp Salt
- 2 Eggs
- 1½ cups Milk, warmed (heat the milk in a microwave until it is warm)
- 6 tbsp butter, melted
- 1 tsp vanilla
Secret Ingredient
- 1 tsp cinnamon

Preheat and spray waffle iron with non-stick cooking spray

In a large bowl combine the flour, sugar, baking powder and salt and whisk to combine.

In a separate small bowl whisk the eggs and stir in the warm milk, melted butter and vanilla extract. Pour the wet ingredients into the the dry and whisk until blended. Sprinkle cinnamon on top of the mix and combine. Let the mix sit for a minute and become thick. This will help make your waffles amazing.

Scoop the batter into the preheated waffle iron and cook until waffles are golden brown and crisp. (Tip: if you want them crisp, let them stay in until the light goes off the steam settles down.) Serve immediately or place in the oven to keep warm.

Enjoy with a dollop of whipped cream (or your favorite toppings)!
*Wrap the leftover waffles in press n' seal, place in a ziploc bag, and freeze up to 3 months.
To reheat waffles, place frozen waffle in the toaster and cook until heated through and crisp on the outside.
